April 2018 the last of the dairy cattle went in for processing. The bull and a cow that has not ever conceived a calf. They are both mostly Jersey with a splash of French Normandy and have been grazing or lush organic fields for 3-6 years. For the farm, we will request bones for broth, ground beef in 1 lb packages, filet mignon (to be eaten by the Farmer’s Family) and organ meats. We need to turn in our cut sheets May 4th.
If you would like to buy 1/4, 1/2 or a whole – let us know and we will provide a custom cut sheet for your family and the processor can prepare cuts to meet your needs. Your 1/4, 1/2 or whole will have that entire part of the animal and you will receive all of the meat and bones from that portion…some organs too if you only take a part.
$5.50/lb hanging (this works out to about $6.50/lb in the package).
Bull hanging weight was 987 lbs
Heifers hanging weight was 577 lbs
$1.50/lb processing (approx, it depends on your specific request and you will pay the processor directly)
You can pick up at the processor or we can pick up and bring it back to the farm when we pick up the meat for the Farm.
A whole will be about 500-800 lbs hanging…this is an educated guess without the actual weights. I will update this when I hear from the processor.
